Most cameras come with standard presets: Standard, Landscape, Portrait, Neutral, Faithful, Monochrome. When you shoot in JPEG, these styles are "baked in" to the final image. When you shoot in RAW, the style is embedded as a preview, so what you see on the back of your camera looks good, even if the RAW data is flat.
